This is a short post because I didn’t take pictures! Sorry guys – it was a busy weekend. My little niece Kamryn turned 4 yesterday, so Mom and I helped out with food for the party. We made crab rangoon from scratch (okay, we cheated and bought the wontons, but everything else was us!), egg rolls, slaw and this Asian Noodle Salad.
This salad is chock FULL of veggies! Peppers, spinach, cabbage, etc. Once everything was chopped, it was super easy to assemble. It seems to be keeping very well in the fridge too – dressed and all. I made a TON (literally – a TON) of this stuff. I doubled the recipe, but trust me – you don’t have to unless you’re feeding 100 people!
You must try this one yourself. You won’t regret it:
